Chocolate chip brownies

– 185g unsalted butter
– 185g best dark chocolate
– 85g plain flour
– 40g cocoa powder
– 50g white chocolate
– 50g milk chocolate
– 4 large eggs
– 275g brown sugar

How to do it:

Step 1: Cut the dark chocolate into small pieces and put it in a bowl along with the butter. Fill in a small saicepan about a quarter full with hot water, then sit the bowl on top. Stir occasionally until the butter and the chocolate have melted. Let it rest until it has reached room temperature.
Step 2: Preheat the oven to 160 Celsius. Mix the flour and the cocoa powder and then pass them through sieve in order to get rid of any lumps. Then on the side, chop the white chocolate and the milk chocolate into smaller pieces.
Tips and tricks: Remember, this will be your chocolate chips. Therefore, make sure the size is neither too big, nor too small.
Step 3: Break the eggs into a large bowl and tip in the sugar. With an electric mixer on maximum speed, whisk the eggs and sugar until they look thick and creamy, like a milk shake. Pour the cooled chocolate mixture over the eggy mousse, then gently fold together.
Tips and tricks: Gently mix the two ingredients, as the idea is to keep the air within them. This will make the brownies lighter and will add texture.
Step 4: Add the mix from step 2. Add the chopped chocolate and continue mixing gently. Pour the mixture into the prepared tin and let it bake for around 25 minutes.
Tips and tricks: If the brownie wobbles in the middle, it’s not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny
Finnish: Leave the whole thing in the tin until completely cold. Once it is ready, cut it into desired shapes, cover with powdered sugar est Voilà – your amazing brownies are ready.
